The Commercial Kitchen is used by the Food Production Management course. This space offers students the opportunity to gain hands-on experience with using commercial foodservice equipment as may be used in different facilities including hospitals, long-term care homes, and restaurant kitchens. Students also practice skills in recipe adaptation and modification to meet the varying nutritional and textural needs of patients.
The Commercial Kitchen is equipped with a steam-jacketed kettle, tilt-skillet, gas range, convection oven, planetary mixer, and commercial dishwasher.
