These instructions will change the default save as format in Word 2007. Word 2007 uses a new format called .docx. You are not able to open .docx files in Word 2003 and below (without a converter).
Open Word 2007.
Click the Office logo in the top left hand corner.
Select Word Options. See Fig 1.

Click the Save tab.
Under Save files in this format, Select Word 97-2003 Document (.doc) from the drop down list. See Fig 2.

Click OK.
